Every Roselli knife from Finland is handmade in our small workshop in Harmoinen. We use traditional Nordic knife-making methods that focus on function, strength and simplicity. Roselli offers two fillet knives designed for different types of fish and techniques.
Small Fillet knife (12 cm)
Lightweight and precise, this knife is ideal for smaller fish such as perch, whitefish and trout. The slim, flexible blade offers excellent control along the bone, making it easy to produce clean fillets with minimal waste. Its compact size makes it easy to handle whether you are cleaning fish at the shore, in a boat or at home. Made from Ultra High Carbon (UHC) steel, it delivers exceptional sharpness and long-lasting edge performance.
Big Fillet knife (19 cm)
A longer blade for larger fish in the 2–3 kg range such as pike, salmon and zander. Offers excellent slicing power while still being flexible enough for accuracy. Made for anglers who want efficiency when processing bigger catches. Also supplied with a handcrafted vegetable-tanned leather sheath made in Finland.
